I have been quite a busy elf over the last few weeks. I traversed the California coast a few times. South to see the boyfriend and interview for a job and north to batten down the hatches of a sailboat and visit with family. I braved the snow for the first time up at the beautiful Lake Tahoe (photos to come) and bailed out our flooded family room… twice.

I currently find myself in the lovely little hometown of my boyfriend, Los Gatos, California. It is a quaint little town with Christmas lights that twinkle down the quiet main street and glimpses of horse drawn carriages that tug along riders to a special holiday light show each evening in the park. I met some babies for the first time, kissed those babies, and then hastily passed them back to their new mothers. I’ve holiday shopped my heart out, but my nimble fingers have yet to complete the wrapping of a single gift. It will happen. There’s still time.

While I bide some time before I hitchhike back home with some friends of mine, I wanted to share this recipe for what I consider to be peanut butter blossoms 2.0. These are not your average Hershey Kiss plopped atop of a mound of cookie. These are the ultimate pairing of dark chocolate, peanut butter, toffee peanuts, and bacon. Yes, bacon.

These bacon toffee peanut butter cookies are serious cookies. They have leadership qualities. Like the Star-Lord in your galaxy of cookie recipes. Keep this in your arsenal and you will not only win the respect of your little rambunctious cousins, but also your office, the mailman, and the persnickety ladies in your mother’s cookie exchange.

This recipe could not be any more simple. One bowl and only five ingredients for the cookies. Yup, five. Toss them all in your bowl and beat until combine. Cookie dough ready.

While the cookies cool and make your house smell like childhood, prep the dippins’. Slowly melt your chocolate and shortening in the microwave, chop the toffee covered peanuts (honey roasted could work too), and crumble your bacon.

You’ll start feeling like the epicurean elf you are once you get this assembly line in full swing. This is a great time to call in for back-up. It may keep them from eating all of the bacon bits before they make it on the cookies.

Bacon Toffee Peanut Butter Cookies

Yield: 1 and 1/2 dozen


  • 1 cup (270 grams) smooth peanut butter
  • 1 cup (198 grams) granulated sugar
  • 1 large egg
  • 1 tsp baking soda
  • 1 tablespoon all-purpose flour
  • 1/2 cup (88 grams) good quality dark chocolate chips
  • 2 tablespoons (24 grams) vegetable shortening
  • 1/2 cup toffee covered peanuts
  • 3-4 slices cooked bacon


  1. Preheat your oven to 350 degrees F. Line two baking sheets with parchment.
  2. Combine peanut butter, sugar, egg, baking soda, and flour in a large bowl or bowl of a stand mixer. Using a hand or stand mixer, mix ingredients on medium speed until combine and dough pulls away from sides of bowl.
  3. Using a small scoop, form 1” balls of dough and place on cookie sheet. Use a fork to create hash marks by pressing down lightly horizontally then vertically.
  4. Bake cookies 10-12 minutes rotating halfway through. Let cookies cool on baking sheet on cooling rack.
  5. While cookies cool, melt chocolate and shortening in a microwave safe dish in 30 second intervals until almost melted. Set aside to continue melting completely. Chop peanuts and bacon and place in shallow dishes.
  6. Once cookies have cooled, dip half of each cookie into melted chocolate, then peanuts, then bacon. Place cookies back on parchment to set. Store in refrigerator for up to 4 days.
